Which Wine Is This?

Sooner or later someone at the table asks „so what is this wine?“ — and the answer is the tamada's job. Here are the Georgian grape varieties, grouped by region, the way you actually need them at a supra.

Kakheti

Most of the country's vineyard is here — and so is the qvevri classic.

  • რქაწითელი — Rkatsiteli

    white
    Sugar:
    20–24%

    The most widely planted Georgian variety. Left on the skins it gives amber Kakhetian wine; pressed the European way, something light and dry. Tsinandali, Gurjaani, Tibaani and Kardanakhi are all its names.

  • საფერავი — Saperavi

    black
    Sugar:
    20–26%
    Ripens:
    from the second half of September

    One of the rare varieties whose juice is red too — which is where the name comes from. Kindzmarauli, Akhasheni, Mukuzani and Napareuli are made from it.

  • ქისი — Kisi

    white

    A Kakhetian variety that was nearly lost and has been brought back. In a qvevri it gives dried and stewed fruit; as a dry white it goes out under the name Khornabuji.

  • ხიხვი — Khikhvi

    white
    Sugar:
    up to 29%

    A Kakhetian variety surviving on a small acreage. The sugar climbs very high, and honey and orchard fruit stay in the wine.
